sausage.bfast.sandI am a total sucker for these.  In fact, I have a hard time starting in the morning without this and iced tea.  I also have a great weakness for Starbucks, and am trying to wean myself.

To be honest, my life pretty much revolves around Starbucks, their iced tea, and trying to recreate it all at home.  In fact my son told me the other day that when he grows up he wants to work at Starbucks, that way he can see me every day.

Wake up call!  Time to suck it up and make this stuff at home!

So, I’m learning.  I’ve mastered most of my favorites there already.  The only one left, was the breakfast sandwich.

So, I started with some amazing sausage from our favorite local farm.  I made one pound, cooked them all, kept one in the fridge for tomorrow, and froze the rest.

While that was cooking, I got to work on the eggs.  I saw this great idea on Pintrest, way back when.  I took my jumbo muffin pan and cracked an egg in each little muffin cup.  Sprinkle it with salt and pepper, add a little half and half, and finish it off with a little fork scramble (feel free to skip this step if you prefer- I like ’em scrambled).  Then pop them into a 350 degree oven for about 15 minutes, or until they look done.  Again, I kept one in the fridge for tomorrow, and froze the rest.

Now its time to assemble!  Take your english muffin, top with the cooked egg, sausage, and some grated cheese of your choice, and pop it into a toaster oven (or your regular oven at 350) for a few minutes, or until its warm and the cheese is melty and gooey and oh so delicious!

IMG_6873-EditTo use your frozen eggs and sausage, just take one out the night before and put it in the fridge.  Sometimes I assemble the whole thing, wrap it in tin foil and put it in the fridge.  That way all I have to do in the morning is pop it in the oven, grab my iced tea and eat it while I’m driving the kids to school, trying not to be late for the second time that week, and hoping I didn’t forget anything!
