Have you ever seen one of these beauties?  It is my favorite cabbage- crisp, striking, and slightly sweet.  Not the sulfurous bitterness you can get from some leafy greens.

Savoy cabbage is a storehouse of vitamins- Vitamin K and C being the big ones, even Omega-3 fatty acids, folate, vitamin B6 and potassium can be found here.

At the farmer’s market this weekend one of these lovelies caught my eye, and I had to have it.  They are huge, so be prepared for a number of cabbage recipes in the near future.  Chinese chicken salad being the first.  They are mild and sweet and can be eaten raw, braised, roasted, even in soups.
