Anyone have tomatoes overflowing in their garden?  If so, please drop some off at my house!  I’ve been loading up at the farmer’s market.  My favorite stand has these gorgeous heirloom tomatoes that have made their way into sandwiches, salads, and salsa almost daily the last two weeks.

Here is a fresh salsa recipe that is incredibly healthy, and unbearably delicious.  Fresh garlic, onions, peppers- these are super immune boasters, just what we need heading into the fall, right?

Heirloom Tomato Salsa

  • 4-5 tomatoes small diced
  • 1/4 small onion (red, white or sweet yellow) small diced
  • 2 garlic cloves minced
  • 1/4 cup diced cilantro
  • Juice of 1 lime or lemon
  • Salt to taste
  • optional- mild to hot peppers depending on taste, small diced

Toss together in a bowl and let flavors blend at room temperature for 30 minutes (if you can!) before serving.

Serve with chips, over chicken or fish, or however you love your salsa.

Of course you can make this with most kinds of tomatoes.  You want to use firm ones, not too large and juicy.  Romas or plums work well if you don’t have heirlooms available.
