We moved into a house recently that has been vacant for a few years, and the yard is covered with blackberry bushes.  So, when life gives you blackberries, make blackberry lemonade!  Or blackberry limeade if you’re me.

I looked up some recipes online, and they were all WAY too fussy for me.  No simmering for ten minutes, infusing, or making of simple syrups is going to happen when I am hot and thirsty.  I needed something refreshing, and ready in less than 5 minutes. And thus, a classic was born…

Ian was my assistant picker.  He was a bit nervous about all of the “pokies” though.

I was so excited to get our first bowlful today, but apparently Will was even more excited.  Because he ate every last one in about 5 minutes.

Blackberry Lime Cooler

In a bowl muddle one cup of washed blackberries with 2 Tablespoons honey. Strain, reserving berries for ice cream or something yummy. Add the juice of two limes.

find your self a helper

This is a concentrate that you can keep in the fridge for a few days.  Pour a few tablespoons to 1/4 cup concentrate over ice, and add cold water to your taste.  Garnish with fresh blackberries.

Honey gives it a more earthy flavor and is better for you than sugar.  But if you prefer sugar, just muddle a few tablespoons with the berries instead.  You can also use lemons instead of lime if that’s what you have.  And sometimes, I even add some mint.
